From 2014 to 2018 I studied for a BSc (Hons) in Brewing and Distilling, graduating with a 2.1. During the summer of 2017 I worked for a local craft brewery, gaining practical experience of all aspects of brewing and packaging. Following graduation, I worked for a short period at Glasgow Distillery Company, involved in production from malt to new-make spirit. My passion is making (and consuming) high quality craft beverages.Experience:May to September 2017 Brewery assistant at Crossborders Brewing Company, Eskbank, Midlothian.At Crossborders I started helping the brewer with cleaning (mechanical and CiP), brewing (including taking measurements of temperature, pH, gravity, and keeping records of such), cask and keg washing and filling. As my competence increased, I was trusted to brew the five core products, three pale ales, a Scottish heavy and a porter. I was also involved in developing recipes for seasonal and one-off brews.Personal achievements include:• Adjusting the mashing/sparging procedure leading to increased consistency in wort characteristics, and reducing kettle to FV transfer time• Identifying a couple of areas of possible microbiological contamination, and modifying the cleaning procedure to reduce the probability of infection• Developing and producing a Special Bitter which was sold as a one-off cask ale in EdinburghAugust 2018 Work experience at Glasgow Distillery Company, Hillington, GlasgowFollowing training at Glasgow distillery, I consistently produced wash to specified ABV and volume, and operated the wash and spirit stills, making cuts at specified ABV, and liquored back the new-make spirit to cask ABV. I was also responsible for taking measurements and keeping a record of such.
